Pineapple Pulishery

INGREDIENTS

  • Thick curd  >  1 cup
  • Coconut >  1/2 cup
  • Pineapple >  1/2 cup cut into small cubes
  • Turmeric powder  >  1/2 tsp
  • Red chilly powder >  1/4 tsp
  • Cumin seed  >  1/4 tsp
  • Mustard seed  >  1/2 tsp
  • Fenugreek seed  >  1/4 tsp
  • Fenugreek Powder  >  1/6 tsp
  • Green chilly >  3
  • Shallots  >  2
  • Dry red chilly >  2
  • Curry leaf  >  1 stem
  • Oil  >  1 or 2 tbp
  • Boiled water   >  1/4 cup
  • Salt to taste

METHOD

  • Add boiled water to curd and mix it using a spoon/fork.
  • Take a pan and cook pineapple by adding 1/4tsp turmeric, red chilly powder and ¼-1/2 cup water. Cook  till it becomes tender.
  • Grind coconut, cumin seed,1 green chilly, 1/4tsp turmeric into a fine paste.
  • Add the grinded mixture and fenugreek powder to the cooked pineapple and allow it to boil.
  • Now reduce the flame and add beaten curd.  Mix it well and keep in low flame till it becomes warm .  Make sure to switch off  the flame before it starts boiling.
  • Heat oil in a small pan and add mustard seeds, when it cracks add fenugreek seed,  green chilly and dry red chilly. Then add thinly sliced shallots and sauté till it turn light brown. Now add curry leaf and fry for 1 minute. Pour this to the pineapple Pulishery.
  • Pineapple Pulishery is now ready to be serverd. It is served well with rice.
