Chammanthi (Red Coconut Chutney – Kerala style)

INGREDIENTS

  • Coconut >   1 cup grated
  • Ginger >   ¼ tsp
  • Green Chilly >   1
  • Red Chilly Powder >   1 tsp
  • Shallots >   4
  • Dry Red Chilly >   2
  • Mustard Seeds >   ½ tsp
  • Curry Leaves >   2 stem
  • Oil
  • Salt to taste
  • Warm water

METHOD

  • Roast red chilly powder in a pan in low flame till the raw smell is removed. (less than a minute)
  • Grind coconut, ginger, green chilly, red chilly powder and salt to a fine past by adding a little warm water.
  • Heat oil in a pan, add mustard seeds. When it crackles, add shallots and sauté till it turn brown.
  • Now add dry red chilly & curry leaves, fry it for a few seconds.
  • Reduce the flame and add the grinded paste.  Add enough warm water depending  on the preferred consistency.  Mix well and heat for 2-3 minutes.
  • Remove it from flame before it starts boiling.
  • Chammanthi is now ready to be served.  It is served well when hot and with dosa or idli.
