Pavakka Ulli Mezhukkupuratti / Bitter Gourd Shallots Stir Fry

Ingredients :

Bitter gourd >  3small (thinly sliced)/1cup

Shallots /kunjulli >  1/2cup

Garlic >  2tbp (sliced lengthwise)

Green Chilly >  2 or 3 (cut lengthwise)

Turmeric Powder >  1/2tsp

Chilly Powder  >  1/4tsp

Dry Red Chilly >  1

Mustard Seeds >  1/2tsp

Curry Leaf >   1stem

Oil  >  2tbp

Salt to taste

Method:

  • Heat oil in a pan and add mustard seeds, once it crackle add dry red chilly. Then add sliced bitter gourd, turmeric powder, chilly powder and green chilly and sauté for 2minutes. Now close the pan and cook for 3minutes.
  • Now add the shallots and sauté for 3minutes, then add galic, salt , curry leaves and sauté till shallots become transparent and bitter gourd is properly cooked.

Note:-

1)     Adjust the use of green chilly according to your spice preference.

2)     To reduce the bitterness of bitter gourd, mix salt to the sliced bitter gourd and keep it for 20-30 minutes. Then drain or squeeze out the juice.

(for this dish since we are adding  shallots & garlic ,  it won’t taste much bitter)
